Steam doesn’t show a lot of the achievements, but that’s fine.
I guess next challenge would be NaNInf but I’m not sure I want to do that

what was the hardest thing to complete? what was surprisingly easy?
Good question, I think some challenges can really be difficult, like jokerless and the one before that I forgot (cruelty?). I was concerned some jokers would be difficult to carry into the last blind (ice cream and seltzer mostly) but while these were late, they weren’t actually the last ones.
I think if you play enough, and pay some attention to what you still need, it will come just over time. When you have a lot of open jokers remaining, anaglyph is good for stacking double tag into negative, but it’s not something I’d recommend for the last ones

Have about 10 jokers left for C++ and it’s so annoying grinding. I know I’ll get there one of these days just a pain in the arse! Although I am bitching about it now, I know I’m gonna be sad once I get there and have to put this dang great time sucker of a game down.

I didn’t take the approach that I need to grind for them. Instead, I just played the game for fun, but whenever there was a realistic chance to sticker a new joker, I took it. You can’t force them to show up anyways, it’s nice when they do, but there’s no need to play the game just to get them
