I use AnySoft Keyboard. It is very configurable and has a lot of language options.

Totally agree. You can customize it a load. It has a ton of functions even local spellchecking once setup
Second this. Tried a lot of keyboards when moving over to foss, and this one felt hands down the best for me.
Vanilla GrapheneOS keyboard as per their guide.
Keychron running my own build of QMK. Its fully VIA compatible so I can do quick macro changes.
Haven’t seen unexpected keyboard mentioned. Been using that for a few months now. Lots of keys, not many other features. With a compose key, it would almost be perfect. Hackers is my backup keyboard.
